The Perfect Vanilla Cupcake

We’re sharing with you a recipe for the classic vanilla cupcake that is so easy to make, your friends will think you’re a domestic goddess.

I love baking. Besides my aching sweet tooth, I find it terribly therapeutic. My normally frazzled mind is soothed into obedience and thinks of nothing other than the sweet scents and smooth textures of each creation.

So I’m going to share with you the easiest and quickest recipe on hand to whip up that perfect cupcake that’s great for tea or a lovingly handmade gift.

You will need the following for 12 cupcakes:
125g flour
125g caster sugar
125g unsalted butter
2 eggs
1/2 tsp vanilla essence
2-3 tbs milk

Cupcakes!In a large bowl, dump in the flour, sugar, butter, eggs and vanilla essence. Seriously, you’re already half-way there.

In the mean time, pre-heat your oven to 200°C. So while all that loving heating is going on, grab your hand-mixer / fantastic Kitchenaid mixer or if flexing your muscles is your thing, a great big wooden spoon and stir it all together.

Pour in the milk so it has a soft consistency. To test it out, take a spoon and take a dollop of the mixture. If it slides right off, it’s good to go.

Place your cupcake cases on a muffin tray and spoon the mixture in; about half the cup is just right. Once the oven dings, place the tray in for 15 – 20 minutes and you’re done!

That was wonderfully easy wasn’t it?

To pre-make the buttercream you’ll need:
113g butter
113g vegetable shortening
1/2tsp clear vanilla essence/ normal is fine too!
400g (4 cups) icing sugar
2tbs Milk

CupcakesFirst cream the butter and shortening. After it’s gotten lovely and creamy, add in the vanilla essence and just mix it in. Then dump in the icing sugar proportionately – 200g at a time, so it’s mixed in properly.

The consistency will be slightly lumpy, so that’s where the milk has to come in. Add in the 2 tablespoons and mix it in, so that it will be smooth and creamy. And you’re done!

Now all you have to do is get your friends round, get some food colouring and decorations that range from quins, multi-coloured sprinkles and dragees that can all be bought from a supermarket or a specialty baking store.
